Ingredients



For the pudding:85g/3oz basmati rice3-4 cardamom pods, split30g/1oz unsalted butter2 tsp soft dark brown sugar1 tsp white wine1 drop vanilla extract30g/1oz cocoa powder120ml/4fl oz double creamFor the bananas:30g/1oz dark soft brown sugar1 small banana, peeled and cut into long diagonal slices



Method



1. Place the rice in a medium saucepan with the cardamom pods. Pour over enough boiled water to cover the rice by 2.5cm/1 inch. Cover with a lid and simmer until all the water has been absorbed and the rice is cooked through.2. In a medium saucepan, gently melt the butter and brown sugar.3. Stir in the Wine, vanilla extract, cocoa powder and cream until well combined. Simmer gently until warmed through.4. In a small sauté pan, gently melt the sugar for the bananas until golden in colour.5. Add the bananas to the sugar and cook over a medium heat until caramelised.6. Add the rice to the chocolate mixture and stir until well coated.Serve the rice topped with the caramelised bananas.
