Ingredients



225g/8oz couscous1 bunch fresh parsley, chopped1 bunch fresh coriander, chopped1 red onion, very finely chopped1 lemon, zest and juice½ cucumber, de-seeded and finely diced30g/1oz sunflower seeds, toasted30g/1oz sesame seeds, toasted4 tbsp olive oilsalt and freshly ground black pepper



Method



1. Cover the couscous with twice its volume of hot water and leave to soak for 10 minutes. 2. Mix together with the remaining ingredients and leave to stand for 30 minutes to let the flavours develop.3. Serve at room temperature.
