Refrigerator Cookies

Yield: Makes about 4 dozen cookies

Ingredients:



1/2cup sugar

1/4cup light corn syrup

1/4cup margarine, softened

1/4cup cholesterol-free egg substitute

1teaspoon vanilla

1-3/4cups all-purpose flour

1/4teaspoon Baking soda

1/4teaspoon salt

Cookie decorations (optional)









Preparation:





1.Beat sugar, corn syrup and margarine in large bowl. Add egg substitute and vanilla; mix well. Set aside.2.Combine flour, Baking soda and salt in medium bowl. Add to sugar mixture; mix well. Form dough into 2 (1-1/2-inch-wide) rolls. Wrap in plastic wrap. Freeze 1 hour.3.Preheat oven to 350°F. Line Baking sheets with parchment paper. Cut dough into 1/4-inch-thick slices; place 1 inch apart on prepared cookie sheets. Sprinkle with cookie decorations, if desired.4.Bake 8 to 10 minutes or until edges are golden brown. Cool on wire racks.







Variation:

Add 2 tablespoons unsweetened cocoa powder to dough for chocolate cookies.
