Southwestern-Style Chicken (recipes)

Yield: Makes 4 to 6 servings



Ingredients:



1package (about 1-1/4 ounces) taco seasoning mix

1/4cup all-purpose flour

6to 8 boneless skinless chicken thighs or 4 boneless skinless chicken breasts, cut in half

2tablespoons vegetable oil

1large onion, cut into 1-inch pieces

2green bell peppers, cut into 1-inch pieces

1can (14-1/2 ounces) diced tomatoes with jalapeños, undrained

Salt and black pepper









Preparation:





1.Reserve 1 teaspoon taco seasoning. Combine flour and remaining seasoning in large resealable Food storage bag. Add chicken, 1 to 2 pieces at a time; shake to coat.2.Heat oil in large skillet over medium-high heat; brown chicken. Transfer chicken to slow cooker; sprinkle with reserved seasoning.3.In same skillet cook and stir onion until translucent. Place onion, bell peppers and tomatoes with juice in slow cooker. Cover; cook on LOW 6 to 7 hours or until chicken is tender. Season to taste with salt and pepper.
