Chemistry. More fully xanthan gum. A polysaccharide composed of glucose, mannose, and glucuronic acid, produced by fermentation (either by the bacterium Xanthomonas campestris or synthetically) and used in foods as a gelling agent, thickener, etc., and in oil-well drilling fluids.
