Salmon Filo Pie (recipes)

Ingredients



1 packet filo pastry30g/1¼oz butter, melted4 salmon pieces (175-225g/6-8oz per portion), skin on and no boneolive oilsplash of white wine1 carton leek and potato soup100ml/3½fl oz double creamsalt and pepper30g/1¼oz fresh dill, choppedjuice of 1 lemon (optional)



Method



1. Preheat the oven to 180C/350F/Gas4.2. Prepare the pastry topping. Take 2 sheets of filo pastry, scrunch them up loosely and place on a Baking sheet. Repeat three times. 3. Drizzle over the melted butter. Place in the oven for 2-3 minutes until golden brown.4. Pan fry the salmon on both sides until just cooked in a little olive oil. Remove and place in a large serving dish.5. De-glaze the pan with the white Wine. Add the soup, cream, salt and pepper and the dill. Add a squeeze of lemon if using.6. Bring to the boil and season. Spoon over the salmon.7. Top with the filo pastry.8. Serve with potatoes and green salad.
