Damascus iron, or Damascus twist, metal formed of thin bars or wires of iron and steel elaborately twisted and welded together; used for making gun barrels, etc, of high quality, in which the surface, when polished and acted upon by acid, has a damasc appearance. Ingredients



2 large handfuls fresh mint leaves, finely chopped.2 tbsp cider vinegar2 tbsp apple juice1 tbsp caster sugar



Method



Mix together all the ingredients and leave to infuse for about an hour before serving.Tip:If you' re having this mint sauce in the spring or summer months, add 2 tbsp finely chopped spring onions for a change.
