Fumarylacetoacetate hydrolase, an enzyme that catalyses the hydrolysis of fumarylacetoacetate to fumarate and acetoacetate; a deficiency indicates tyrosinaemia IA.

Ingredients



3 medium aubergines4 tbsp lemon juice4 tbsp tahini (sesame paste)2 garlic cloves, crushed2 tbsp olive oilsalt, to taste



Method



1. Bake whole aubergines in a moderate oven until soft. 2. Allow aubergines to cool slightly. When cool enough to handle, split the aubergines and scoop out the flesh into a bowl. Add the lemon juice to prevent browning.3. Add the tahini, garlic, olive oil and salt to the aubergine mixture and mash together thoroughly with a fork. The mixture should be the consistency of lumpy double cream. For a smoother texture, you can blend in a Food processor.
