Term applied to any one of the three major layers of gray matter of the superior colliculus that alternate with layers composed chiefly of nerve fibres: 1) the superficial gray layer of superior colliculus, above the largely white layer of the incoming fibres of the optic tract (optic layer); 2) the middle gray layer of superior colliculus, placed between the optic layer and a more deeply located layer of fibres, the stratum lemnisci; 3) the deep gray layer of superior colliculus, between the stratum lemnisci and the central gray substance surrounding the cerebral aqueduct, and containing the large nerve cells from which most of the colliculus descending connections (tectobulbar, tectopontine, and tectospinal tract) originate.

Synonym: stratum griseum colliculi superioris, stratum cinereum colliculi superioris.

Ingredients



For the caramelised onions80ml/3fl oz olive oil2 large onions, finely slicedFor the mushrooms6 large field mushrooms, peeled and trimmedsalt and freshly ground pepper30g/1oz butter2 garlic cloves, roughly chopped100ml/3½fl oz olive oilFor the rarebit225g/8oz mature cheddar or gruyere cheese, grated1 tsp wholegrain mustard1 garlic clove, crushed1 free-range egg, beaten



Method



1. Preheat the oven to 180C/355F/Gas 4 and preheat the grill to its highest setting.2. For the caramelised onions, heat the oil in a frying pan over a very low heat. Add the onions and gently fry for 45 minutes, stirring regularly, until the onions are caramelised, golden-brown and sweet.3. Meanwhile, for the mushrooms, place the mushrooms in a Baking dish and season with salt and freshly ground black pepper. Sprinkle with the butter and garlic, then pour over the olive oil. Transfer to the oven to bake for 10-12 minutes, until softened slightly.4. For the rarebit, place the cheese, mustard, garlic and egg into a bowl and mix together well.5. Remove the mushrooms from the oven. Spoon over the caramelised onions and some of the rarebit mixture, pressing this topping into each mushroom.6. Transfer the mushrooms to the hot grill and cook until the cheese bubbles, melts and becomes golden-brown.7. To serve, place a large cheese-coated mushroom onto each of six plates.
