Ingredients



For the steak170g/6oz sirloin steak1 tbsp olive oilsaltfreshly ground black pepperFor the sauce1 spring onion, chopped ½ glass red wine1/3rd beef stock cube, crumbled85ml/3fl oz boiled water30g/1oz unsalted butter



Method



1. Place the steak between two pieces of cling Film and batten out with a meat mallet.2. Preheat a griddle pan over a high heat.3. Season and oil the steak.4. Griddle the steak for one minute on each side. Remove the steak from the pan and place on a serving plate, to rest.5. Sauté the onion in the same pan for 30 seconds then deglaze the pan with the Wine.6. Stir in the beef stock and water. Simmer for two minutes.7. Add the butter and swirl the pan until the sauce thickens and becomes glossy. Season.8. Serve the steak with the sauce poured over the top.
