Ingredients



For the mackerel1 mackerel fillet1 free-range egg, beaten3 tbsp sesame seeds1 tbsp olive oilFor the sweet and sour beetroot sauce1 beetroot, peeled and chopped3 tbsp water2 tbsp soy sauce2 tbsp clear honey2 tbsp red Wine vinegar1 tsp cornflour, mixed with 1 tbsp water to make a pasteFor the turmeric rice100g/3½oz long grain rice, cooked according to packet instructions and drained1 tbsp ground turmericsalt and freshly ground black pepper chopped fresh parsley, to serve



Method



1. For the mackerel, dip the mackerel in the beaten egg. Sprinkle the sesame seeds onto a plate and press the mackerel into the sesame seeds to coat all over.2. Heat the oil in a frying pan and fry the mackerel for 3-4 minutes on each side, or until golden-brown and completely cooked through.3. For the sweet and sour beetroot sauce, place the beetroot, water, soy sauce, honey and red Wine vinegar into a saucepan and simmer for ten minutes, or until the beetroot is soft.4. Stir in the cornflour paste until the sauce is thickened and smooth.5. For the turmeric rice, place the cooked rice into a bowl. Add the turmeric, season, to taste, with salt and freshly ground black pepper and mix well.6. To serve, place the rice onto a serving plate and top with the mackerel. Pour over the beetroot sauce and garnish with parsley.
