Asparagus with No-Cook Creamy Mustard Sauce

Yield: Makes 6 servings



Ingredients:



1/2cup plain fat-free yogurt

2tablespoons reduced-fat mayonnaise

1tablespoon Dijon mustard

2teaspoons lemon juice

1/2teaspoon salt

2cups water

1-1/2pounds asparagus spears, trimmed

Black pepper to taste









Preparation:





1.For sauce, whisk mayonnaise, mustard, lemon juice and salt in a small bowl until smooth; set aside.2.Bring water to a boil in 12-inch skillet over high heat. Add asparagus. Return to a boil. Reduce heat; cover tightly and simmer 3 minutes or until just tender-crisp. Drain on paper towels.3.Place asparagus on serving platter and spoon sauce over all. Sprinkle with black pepper.
