Ingredients
4 egg whites225g/8 oz caster sugarFor the filling:290ml/10fl oz whipping cream, whipped
Method
1. Preheat the oven to 130C/250F/Gas 1. Line 2 baking sheets with baking parchment.2. Place the egg whites in a large bowl and whisk on high speed with an electric or hand rotary whisk until stiff but not dry. Add the sugar, 1 teaspoon at a time, whisking well after each addition, still on high speed, until all the sugar has been added.3.Pipe the meringue mixture into shells using a 1cm/½in plain nozzle on to the lined baking trays or shape into shells using 2 dessertspoons.4. Bake for about 1-1½ hours, or until they can be lifted easily from the paper without sticking. Turn off the oven, leave the door ajar and leave the meringues until cold.5. To serve fill with the whipped cream.
