Biscuit Pizzas (recipes)


Biscuit Pizzas

Cook/Bake Time: 18 minutes

Prep Time: 15 minutes

Yield: Makes 8 servings



Ingredients:



1package (about 16 ounces) refrigerated flaky biscuits

8tablespoons tomato sauce

2slices turkey bacon, cooked and crumbled

1/4cup chopped green bell pepper (optional)

1/4cup chopped onion (optional)

Nonstick cooking spray

1-1/4cups cholesterol-free egg substitute

1/4teaspoon black pepper

1/2cup (2 ounces) shredded reduced-fat Cheddar cheese









Preparation:





1.Preheat oven to 375°F. Place biscuits 2 inches apart on large ungreased baking sheet. Make indentation in center of each biscuit to form edge. Spoon 1 tablespoon tomato sauce into center of each biscuit. Set aside.2.Cook bacon, bell pepper and onion, if desired, in large nonstick skillet over medium-high heat until crisp. Remove bacon to paper towels. Drain grease from skillet.3.Spray same skillet with cooking spray. Add egg substitute; season with black pepper. Cook, stirring often, about 1 minute or until eggs are cooked.4.Spoon eggs evenly into biscuit centers. Crumble bacon; sprinkle over eggs. Top with cheese. Bake 15 to 17 minutes or until pizza edges are golden brown.







Variation:

Try substituting low-fat sausage for the bacon in this recipe. Or, try another of your favorite reduced-fat cheeses in place of the Cheddar.
