Ingredients



200g/7oz self-raising flour1 tsp bicarbonate of soda50g/1¾oz caster sugar1 free-range egg50g/1¾oz butter, melted250ml/9oz milk125g/4½fl oz cottage cheese225g/8oz blueberries15g/½oz unsalted butter, plus extra for cookingTo serve4 knobs butter8 rashers bacon, grilled until crispmaple syrup, for drizzling



Method



1. Mix the flour, bicarbonate of soda and sugar together in a bowl. 2. In a separate bowl combine the egg, melted butter, milk and cottage cheese. Gradually add the cottage cheese mixture to the flour mixture, whisking constantly until a smooth batter is formed. 3. Add the blueberries and stir gently.4. Heat a knob of butter in a frying pan over a medium heat. Place spoonfuls of the batter into the hot pan and cook for one minute on each side, or until golden.4. To serve, place two pancakes per person onto a warmed plate. Top with a little extra butter, two rashers of grilled bacon and a drizzle of maple syrup.
