Breakfast Parfaits

Yield: Makes 1 serving



Ingredients:



1/2cup Date-Nut Granola (recipe follows) or your favorite granola

1/4cup plain fat-free yogurt or low-fat (1%) cottage cheese

1/2cup sliced strawberries

1/2ripe banana, sliced









Preparation:





1.Place half of granola in parfait glass or glass bowl. Top with half of yogurt. Arrange half of strawberries and the banana over yogurt. Top with remaining granola, yogurt and strawberries.







Vitamin C:

The morning meal is a good time to get your daily does of vitamin C. Good sources include orange, grapefruit and tomato juices and strawberries, cantaloupe and kiwifruit.

Date-Nut Granola

Yield: Makes 6 cups



Ingredients:



2cups uncooked old-fashioned oats

2cups barley flakes

1cup sliced almonds

1/3cup vegetable oil

1/3cup honey

1teaspoon vanilla

1cup chopped dates









Preparation:





1.Preheat oven to 350°F. Grease 13X9-inch baking pan.2.Combine oats, barley flakes and almonds in large bowl; set aside.3.Combine oil, honey and vanilla in small bowl. Pour honey mixture over oat mixture; stir well. Pour into prepared pan.4.Bake about 25 minutes or until toasted, stirring frequently after the first 10 minutes. Stir in dates while mixture is still hot. Cool. Store tightly covered.
