Ingredients



For the rosti½ carrot, peeled and grated½ celeriac, peeled and gratedsalt freshly ground black pepper2 tbsp olive oilknob of unsalted butterFor the pork1 pork loin (approx. 200g/7oz)salt freshly ground black pepper2 tbsp olive oil



Method



1. Preheat the oven to 220C/425F/Gas 7.2. Remove the fat from the pork loin and score the fat. Place on a baking tray.3. Season the pork loin and transfer to the baking tray with the fat.4. Drizzle with olive oil, then roast in the oven for 10-15 minutes, or until the pork is cooked through and the fat crispy and golden.5. To make the rôsti, place the carrot and celeriac into a medium bowl and season. Mix together. 6. Heat the oil in a small non-stick frying pan and scatter the carrot and celeriac into the pan, spreading out evenly.7. Gently heat for 3-4 minutes on each side.8. Dot the top of the rosti with the butter and transfer to the oven. Cook for a further 4-5 minutes.9. Remove the pork and crackling from the oven transfer to a serving plate.10. Serve the rôsti alongside.
