Ingredients
150g/6oz chicken livers, trimmed25g/1oz unsalted butter½ onion, peeled and thinly sliced2.5g/¼tsp chilli flakes60ml/4 tbsp double cream2 x 10cm/4" rounds brioche loafsaltfreshly ground black pepper
Method
1. In a small saute pan, fry the brioche rounds for 1 minute on each side. Remove and set aside.2. In the same pan, gently heat the butter, until brown and frothy.3. Gently saute the onion for 2 minutes to soften.4. Stir in the chilli flakes for 30seconds.5. Fry the livers for 1-2 minutes on each side (liver should brown on the outside and remain pink on the inside).6. Stir in the cream and cook for a further minute. Season.7. Serve a portion of the creamy livers on a fried brioche round.
