Creepy Spider Cookies (recipes)




Yield: Makes 10 servings



Ingredients:



10chocolate sandwich cookies

1container (16 ounces) vanilla frosting

Chocolate pretzel twists or chocolate-covered pretzel twists

20cinnamon red hots or mini chocolate chips









Preparation:





1.Split 1 sandwich cookie open for each spider. Scrape out filling and replace with 1 heaping tablespoon vanilla frosting. Break off cured parts of 2 to 3 pretzels to create 8 curved legs. Arrange 4 legs on each side of frosting.2.Top frosting with remaining cookie so frosting shows on 1 side. Add 2 cinnamon red hots for eyes.

Stuffed Bell Pepper (recipes)




Yield: Makes 2 servings



Ingredients:



1/2cup chopped fresh tomatoes

1teaspoon chopped fresh cilantro (optional)

1/2clove garlic, minced

1/4teaspoon dried oregano leaves

1/8teaspoon ground cumin

4ounces ground beef round

1/4cup cooked brown or white rice

2tablespoons cholesterol-free egg substitute or 1 egg white

1tablespoon finely chopped onion

1/8teaspoon salt

1/8teaspoon black pepper

1large bell pepper, any color, seeded and cut in half lengthwise

2sheets (12X12 inches) heavy-duty foil, lightly sprayed with nonstick Cooking spray









Preparation:





1.Preheat toaster oven or oven to 400°F.2.Combine tomatoes, cilantro, if desired, garlic, oregano and cumin in small bowl. Set aside.3.Thoroughly combine beef, rice, egg substitute, onion, salt and black pepper in medium bowl. Stir 1/3 cup tomato mixture into beef mixture. Spoon filling evenly into pepper halves; place each pepper half on foil sheet.4.Double fold sides and ends of foil to seal packet. Place on toaster oven tray (or Baking sheet if using oven).5.Bake 30 minutes or until beef is no longer pink and pepper halves are tender. Serve with remaining tomato salsa, if desired.
