Easy Italian Vegetable Soup

Yield: Makes 5 to 6 servings



Ingredients:



1can (about 14 ounces) diced tomatoes, undrained

1can (about 10 ounces) condensed beef broth

1-1/2cups sliced mushrooms

1medium yellow onion, chopped

1medium zucchini, thinly sliced

1medium green bell pepper, chopped

1/3cup dry red Wine or beef broth

1-1/2tablespoons dried basil

2-1/2teaspoons sugar

1tablespoon olive oil

1/2teaspoon salt

1cup (4 ounces) shredded mozzarella cheese (optional)









Preparation:





1.Combine tomatoes, broth, mushrooms, onion, zucchini, bell pepper, Wine, basil and sugar in slow cooker. 2.Cover; cook on LOW 8 hours or on HIGH 4 hours.3.Stir oil and salt into soup. Garnish with cheese.
