Essence or extract (recipes)


These are concentrated flavourings (for example from vanilla pods, almonds, anchovies or coffee beans) used to flavour and enhance foods, and can also refer to synthetic flavourings. They' re usually sold in small bottles or jars.Vanilla extract is extracted from pure vanilla pods whereas vanilla essence is made synthetically. The distinction between extract and essence isn’t always so clear cut, however, so read the labels carefully. Commercial beef extracts include Bovril and Oxo. Marmite, for instance, is a commercial yeast extract.
