Feta-Stuffed Tomatoes (recipes)


Feta-Stuffed Tomato

Prep Time: 5 minutes

Yield: Makes 4 servings



Ingredients:



2small plum tomatoes (about 1/4 pound)

1/3cup chopped seeded cucumber

1tablespoon chopped fresh mint

1tablespoon crumbled reduced-fat feta cheese

1tablespoon fat-free sour cream

1/2teaspoon finely grated lemon peel

1/4teaspoon black pepper









Preparation:





1.Cut tomatoes lengthwise into halves. Scoop out and discard pulp, leaving 1/4-inch-thick shells. Place tomato shells, cut sides down, on paper towels to drain.2.Combine cucumber, mint, feta cheese, sour cream, lemon peel and pepper in small bowl. Spoon mixture into tomato shells.
