Fried Chicken For 2 (recipes)

Ingredients

4 chicken legs (or whatever your favorite pieces of chicken are!)

1 Large egg

1/2 cup of corn meal

1/2 cup of all purpose flour

2 tablespoons sugar

1 tablespoon of garlic powder

1 teaspoon of ginger

3 tablespoons salt

3 tablespoons pepper

2 teaspoons seasoned salt

Directions

Beat large egg slightly or until mixed. Set aside. Mix flour, cornmeal, ginger, sugar, garlic salt, pepper, and seasoned salt in separate bowl until blended. in a large frying pan heat 4 big tablespoons of shortening (you can use vegetable oil, but shortening works better) over a medium heat.

Dip the chicken in the egg until covered and then smother it in the flour mixture. Put it in the pan and heat until chicken is no longer pink. This is a great recipe I discovered when I was experimenting. I cook for a lot of people (my husband is in the military) and everyone always loves it. It is a BIG hit!
