Ingredients



olive oil 2 slices of bread½ onion, sliced1 yellow pepper, quartered1 red pepper, quartered85g/3oz garlic sausage, sliced lengthways30g/1oz fresh basil30g/1oz fresh chervil30g/1oz fresh flatleaf parsley



Method



1. Preheat a griddle pan.2. Drizzle a little olive oil over the bread. Place the bread in the griddle pan. Griddle until toasted.3. Remove the bread from griddle.4. Place the onion, peppers and sausage in the griddle pan. Griddle for 3-5 minutes.5. Prepare a herb oil by placing the fresh herbs and at least 4 tbsp of olive oil in a processor. Blitz.6. Spread the herb oil on to one side of the griddled bread.7. Remove the onion, peppers and sausage from the griddle.8. Place one slice of bread on a plate, herb oil facing up. Arrange the onion, peppers and sausage on top of the bread. Place the second piece of bread on top, herb oil facing down.9. Serve while still warm.
