Ingredients



900g/2lb ripe tomatoessalt and freshly ground black pepper5 tbsp extra virgin olive oil½ onion, roughly chopped2 cloves garlic, crusheda little fresh or dried thymea little fresh or dried oregano1 tsp tomato puréea pinch of sugar90ml/3fl oz tomato juice (optional)250ml/9fl oz vegetable or chicken stock



Method



1. Preheat the grill to the highest setting.2. Cut the tomatoes in half horizontally and remove the seeds. Place them on a baking sheet, sprinkle with a little salt and 2 tbsp of the olive oil, then place them under a hot grill for 8-10 minutes until charred.3. Meanwhile, heat the remaining oil in a pan, add the onion, garlic and herbs and sweat until translucent. Add the grilled tomatoes and tomato purée and cook for 3-4 minutes. Add the sugar, the tomato juice if using, and a little seasoning, then pour in the stock and bring to the boil, stirring occasionally. 4. Reduce the heat and simmer for 12-15 minutes, then adjust the seasoning and pass through a fine strainer.
