Italian Three-Cheese Macaroni (recipes)


Italian Three-Cheese Macaroni

Yield: Makes 4 servings



Ingredients:



2cups uncooked elbow macaroni

4tablespoons butter

3tablespoons all-purpose flour

1teaspoon Italian seasoning

1/2to 1 teaspoon black pepper

1/2teaspoon salt

2cups milk

3/4cup (3 ounces) shredded Cheddar cheese

1/4cup grated Parmesan cheese

1can (14-1/2 ounces) diced tomatoes, drained

1cup (4 ounces) shredded mozzarella cheese

1/2cup dry bread crumbs









Preparation:





1.Preheat oven to 350°F. Spray 2-quart round casserole with nonstick cooking spray.2.Cook macaroni according to package directions until al dente. Drain and set aside.3.Meanwhile, melt butter in medium saucepan over medium heat. Add flour, Italian seasoning, pepper and salt, stirring until smooth. Gradually add milk, stirring constantly until slightly thickened. Add Cheddar and Parmesan; stir until cheeses melt.4.Layer half of pasta, half of tomatoes and half of cheese sauce in prepared dish. Repeat layers. 5.Combine mozzarella and bread crumbs in small bowl. Sprinkle evenly over casserole. Spray bread crumb mixture several times with cooking spray.6.Bake, covered, about 30 minutes or until hot and bubbly. Uncover and bake 5 minutes or until top is golden brown.
