Ingredients
½ red onion, finely chopped½ red pepper, finely chopped½ green pepper, finely chopped2 tomatoes, chopped100g/3½oz fresh pineapple, diced50g/1¾oz dried shrimp or 100g/3½oz fresh ones*1 garlic clove, minced (use the side of a knife) 1 medium red chilli, chopped1 tsp oregano, chopped (dried is perfectly acceptable)1 tsp flatleaf parsley, chopped1 tbsp honey1 tbsp ketchupsalt and freshly ground black pepper50ml/1¾fl oz white wine vinegar125ml/ warm water
Method
1. Mix all the ingredients together apart from the water, then pour the water over. 2. Let stand until cold, then serve.*If using fresh prawns, leave these until after the sauce is ready and cold.
