Ingredients

1- 3 to 4 pound boneless pork roast

1 onion, chopped

1 carrot peeled and diced

1 celery stalk peeled and diced

4 cloves garlic chopped

6 black pepper corns

1 bay leaf

3 cups water

1 cup apple juice

oil

salt and pepper



Directions

Preheat oven to 325 degrees.



Salt and pepper the pork roast. In a Dutch oven, heat oil on medium high heat and sear the pork roast on all sides; drain off the oil. Add celery, carrot, onion, bay leaf, pepper corns, garlic, water and apple juice. Place in the preheated oven, uncovered until the internal temperature of the pork reaches 160 degrees. Remove the roast from the pan and strain out the vegetables and herbs. Pour juices back into the pan and reduce the liquid in half. Whisk in 2 tablespoons of cold butter.
