U.S. keelboatman.

He won fame in his youth as a local marksman and Indian scout. Later, when keelboats became the chief vessels of commerce on the Ohio and Mississippi rivers, he was known as "king of the keelboatmen." Renowned as a marksman, roisterer, and champion rough-and-tumble fighter, he became a legendary hero of the American tall tale; even in his own time, his name was synonymous with the braggadocio of Western frontiersmen. He was shot and killed on a fur-trapping expedition to the upper Missouri River.

Ingredients:



1tablespoon fat-free mayonnaise

1tablespoon fat-free sour cream

2teaspoons frozen orange juice concentrate, thawed

1/4teaspoon grated orange peel

1boneless skinless chicken breast (about 1 pound), cooked and chopped

1large kiwi, thinly sliced

1/3cup canned mandarin oranges, drained

1/4cup finely chopped celery

4lettuce leaves, washed

2tablespoons coarsely chopped cashews









Preparation:





1.Combine mayonnaise, sour cream, orange juice concentrate and orange peel in small bowl. Add chicken, kiwi, oranges and celery; toss to coat. 2.Cover; refrigerate 2 hours. Serve on lettuce leaves. Sprinkle with cashews.
